There is a hit in terms of gamut, but it varies from image to image and film
stock to film stock. For the majority of users this rarely effects their
final image given that it's probably going to print.

The SilverFast Plug-in works using the current Photoshop workspace - in your
case Adobe RGB. It hooks into the Photoshop CMM so that monitor
compensation, etc. are handled correctly. I can't really help with Vuescan.
Someone more familiar with it will need to answer that one.
