I just figured this out the other day. Ironically it's in the
documentation in the online help. :-)

Turn off 'auto exposure' in the 'preview' and 'scanning' preferences.

Adjust your exposure to suit the 'key' frame you want to scan, then
save that exposure as a 'setting'. Select all the frames you want to
scan with that particular setting, and 'set' the setting to the
setting you just created.

Works like a charm.

(Well, this is with NikonScan). Vuescan makes this straight forward
to wrt "lock exposure"
