I suggest you set resolution to 2700 pixels/inch (on the
"scan size" tab in Nikonscan). I find it most convenient to
use the mouse on the preview to select the part of the image
to be scanned -- you don't need to put any numbers in the
width and height fields, they will appear automatically to
reflect the area you select in the preview.

If you intend to print with an inkjet printer, you can just
set the print output size in Photoshop (WITHOUT resampling).
A full 35mm frame scanned at 2700 ppi and printed on an 8x10
sheet will end up at about 240 ppi, which is a good
resolution for inkjet printers.

I have recently purchased a LS 2000 scanner. Nikon
documentation is subpar
at best and their toll free customer support couldn't answer
what I thought

appropriate settings for
the input and output width, height & pixel size to get a
scan that I could
cleanup in Photoshop and output to a 8X10 picture?

I am reletively new to pixels and sizes to get appropriate
images.
